When I think of comfort food with a purpose, my Uncle’s Chicken Liver Pâté comes straight to mind. This rich, velvety spread isn’t just a treat for your taste buds—it’s a powerhouse for your fertility, packed with nutrients that can make a real difference when you’re trying to conceive. Plus, just 100 grams of chicken liver delivers over 500 mcg of folate (vital for preventing neural tube defects) and a whopping dose of bioavailable iron to keep your energy and blood supply strong. Chicken liver stands out for its mild flavor and versatility, making it an easy entry into the world of offal. My uncle’s recipe takes it up a notch with a creamy, savory twist that’s downright addictive—proof you don’t have to sacrifice taste for health.


Uncle’s Chicken Liver Pâté Recipe (Adapted)


Here’s how to whip up this fertility-friendly dish in your own kitchen. It’s simple, rustic, and oh-so-satisfying.


Ingredients:


  • ½ onion, finely chopped

  • 2 garlic cloves, minced

  • 1–2 tbsp butter (grass-fed if you can—more fertility fats!)

  • Pinch of salt

  • Pinch of nutmeg

  • 1 tsp fresh thyme leaves (or a sprinkle of dried)

  • 2 tots (about ¼ cup) port or red wine

  • 1 cup chicken broth

  • 1 punnet (about 250g) chicken livers, rinsed and trimmed

  • 3 tbsp cream (heavy or double, for that luscious finish)

  • Sourdough toast, for serving


Instructions:


  1. Sauté the Base: Melt 1–2 tablespoons of butter in a skillet over medium heat. Add the chopped onion and garlic, cooking until soft and fragrant—about 5 minutes.

  2. Season and Simmer: Stir in salt, nutmeg, fresh thyme, port or red wine, and chicken broth. Let the flavors meld for a minute, then add the chicken livers.

  3. Cook It Down: Simmer gently for 10–15 minutes, stirring occasionally, until the livers are cooked through (no longer pink inside) and the liquid reduces by more than half. Want a thicker pâté? Reduce it even further—your call!

  4. Blend to Perfection: Transfer the mixture to a blender (or use a hand blender right in the pan) and process until smooth. Add 3 tablespoons of cream and blend again for that silky texture.

  5. Chill and Serve: Let it cool to room temperature, then refrigerate for a couple of hours to set. Spread it generously on sourdough toast—its tangy crunch pairs perfectly with the richness.


Serves: 4–6 as an appetizer or snack. Keeps in the fridge for 3–4 days (if it lasts that long!).
